This easy boiled potatoes recipe has been a family favorite for years! There are so many different ways to use easy boiled potatoes, but we love to keep it simple with lots of butter, a little oil, seasonings, and lots of fresh herbs. The best part is that you can use any herbs that you have on hand or that you can pick-up from the local grocery store. They truly bring all the best flavor to level up your basic boiled potatoes!

What You Will Need
- potatoes – any type of potato would work here – red potatoes, Yukon gold potatoes, fingerling potatoes, baby potatoes, russet potatoes, etc.
- unsalted butter – always the perfect compliment to any type of cooked potato!
- extra-virgin olive oil – just a little bit to help keep the potatoes from drying out.
- salt and pepper – simple seasonings that are a must and can be adjusted to your personal preference!

How To Boil Potatoes
The first steps to making this easy recipe are to gather all of the simple ingredients.
Now bring a large pot of water to a boil over high heat. Toss the small potatoes into the boiling water and let them simmer for about 10 minutes of cook time or until fork tender. Carefully drain the cooked potatoes and return to the pot.
Next, add the butter, oil, seasonings, and herbs to the pot. Use a wooden spoon to toss and enjoy any way you want!

Utterly delicious and easy Herbed Butter Boiled Potatoes are the perfect side dish that everyone loves! Packed with flavor and so quick!
Ingredients
- 1 1/2 pounds baby red potatoes, halved or quartered (depending upon size)
- 4 tablespoons butter
- 1 tablespoon extra virgin olive oil
- 1 teaspoon kosher salt, more to taste
- 1/4 teaspoon ground black pepper
- 2–3 tablespoons fresh rosemary, minced
- 2–3 tablespoons fresh thyme, minced
- 1 tablespoon Italian seasoning
Instructions
- Bring large pot of salted water to boil.
- Add potatoes and let simmer approx. 10 minutes or until potatoes are soft, but firm.
- Drain potatoes and return to the same pot (but remove from heat).
- Add butter, olive oil, kosher salt, ground black pepper, rosemary, thyme and Italian seasoning. Toss to coat.
- Taste and add additional salt or Italian seasoning for additional flavor. Add additional olive oil or butter if you feel they are dry.
- Serve immediately and enjoy!
