Easy Cheeseburger Quesadillas
We love a good cheeseburger over here and quesadillas are a true quick dinner staple, so why not combine the two to create a weeknight meal that everyone can be excited about! And don’t skimp on burger sauce, you guys. It’s saucy, savory, and adds a punch of flavor.

What You Will Need
- mayo & ketchup – The base of our homemade burger sauce.
- dill pickles & juice – Adds just the right amount of crunch and briny flavor.
- paprika, garlic powder, salt, ground black pepper – A few staple seasonings.
- soy sauce & rice vinegar – Adds some tang and nuance.
- ground beef – The base of our meat mixture.
- yellow onion – Adds some simple warming flavors.
- cheddar cheese – What’s a cheeseburger without it?
- tortillas – We used flour tortillas.
- burger pickles – One of our favorite burger toppings.
How To Make A Quesadilla Burger
Start by gathering and measuring out your ingredients.

Next, bring a large cast-iron skillet to medium-high heat and add in the pound of ground beef, breaking it up as it cooks. Drain off the extra grease and then add in the diced onion, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Move it all around the hot skillet to cook through and then set the cooked ground beef on a paper towel lined plate.

In the same hot skillet ,add a tortilla so that it begins to warm. Then add about half a cup of shredded cheese, a drizzling of burger sauce, and about 1 cup of the ground beef mixture. Then fold the other half of the tortilla over the layered ingredients. Let the tortilla warm for a few minutes before flipping it to warm on the other side to yield melted cheese and a golden brown tortilla. Repeat until all of the tortillas and filling ingredients are gone.

Ingredients
Burger Sauce:
- 1/2 cup mayo
- 1/4 cup ketchup
- 1 tablespoon dill pickles, finely chopped
- 1/2 teaspoon pickle juice
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon soy sauce (sub coconut aminos for gluten-free)
- 1/2 teaspoon rice vinegar
Cheeseburger Quesadillas:
- 1 pound ground beef
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/2 cup sweet yellow onion, diced
- 8oz sharp cheddar cheese, shredded
- 8 regular “taco-sized” flour tortillas

Instructions
- Sauce: Put all of the burger sauce ingredients in a small bowl; mix to fully combine.
- Ground Beef: Bring a large cast iron skillet to a medium-high heat and add the ground beef. Break apart and move around the pan to fully brown. Drain off excess grease. Add diced onion, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Move around hot pan and cook until onion softens. Set aside on a paper towel-lined plate.
- Make Quesadilla: Return the large skillet to a medium high heat and place one tortilla in the pan to warm. Add about 1/2 cup shredded cheese to one half of the tortilla, top with a small amount of burger sauce, add about 1 cup of the ground beef mixture, and then fold the other half of the tortilla over the filling ingredients. Let warm enough for the cheese to melt and the outside to become a nice, golden brown.
- Serve: Carefully remove the quesadilla from the pan, cut into triangles, and serve with pickles, burger sauce, and any other favorite toppings!
Notes
- Dairy Free: simply use a dairy-free alternative cheese in the quesadilla burger.
- Gluten Free: swap out the soy sauce for coconut aminos in the sauce and use gluten free tortillas.
- More Flavor: option to add even more flavor to the ground beef mixture by adding our burger seasoning.
