- Ground Beef: Can be swapped for ground chicken or ground turkey.
- Cheddar Cheese: This is one of the best melting cheese thanks to it’s composition of fat, protein, and moisture. Make this dairy-free by using dairy-free cheese.
- Tortillas: Sub flour tortillas for corn tortillas, but be sure to warm them in the microwave first to prevent them from cracking when folded.
- Special Sauce: Our burger sauce really completes this meal, but feel free to swap with a store-bought version.
How To Make A Quesadilla Burger

Step 1: Brown ground beef, drain grease, and add in seasonings and onion.

Step 2: Stir meat mixture until fully combined.

Then mix in some of our homemade burger seasoning to the meat mixture. We packed in all the essential spices to level up your filling.

Step 3: Add tortilla, half a cup of shredded cheese, 1 cup of meat mixture, and a drizzling of burger sauce and let warm.

Step 4: Fold the tortilla and flip. Let cheese melt and tortilla become golden brown.

Step 5: Remove from skillet, cut, and enjoy!

Ingredients
Special Sauce:
- 1/2 cup mayo
- 1/4 cup ketchup
- 1 tablespoon dill pickles, finely chopped
- 1/2 teaspoon pickle juice
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon soy sauce, sub coconut aminos for gluten-free
- 1/2 teaspoon rice vinegar
Cheeseburger Quesadillas:
- 1 pound ground beef
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/2 cup sweet yellow onion, diced
- 8 oz sharp cheddar cheese, shredded
- 8 regular “taco-sized” flour tortillas

Instructions
- Sauce: Put all of the burger sauce ingredients in a small bowl; mix to fully combine.
- Ground Beef: Bring a large cast iron skillet to a medium-high heat and add the ground beef. Break apart and move around the pan to fully brown. Drain off excess grease. Add diced onion, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Move around hot pan and cook until onion softens. Set aside on a paper towel-lined plate.
- Make Quesadilla: Return the large skillet to a medium high heat and place one tortilla in the pan to warm. Add about 1/2 cup shredded cheese to one half of the tortilla, top with a small amount of burger sauce, add about 1 cup of the ground beef mixture, and then fold the other half of the tortilla over the filling ingredients. Let warm enough for the cheese to melt and the outside to become a nice, golden brown.
- Serve: Carefully remove the quesadilla from the pan, cut into triangles, and serve with pickles, burger sauce, and any other favorite toppings!
Notes
- Dairy Free: simply use a dairy-free alternative cheese in the quesadilla burger.
- Gluten Free: swap out the soy sauce for coconut aminos in the sauce and use gluten free tortillas.
- More Flavor: option to add even more flavor to the ground beef mixture by adding our burger seasoning.
- Toppings: we kept this recipe card simple with a homemade burger sauce and pickle chips, but feel free to add chopped lettuce, tomatoes, red onion, or any other burger toppings.
- Storage: leftover quesadillas can be stored in the fridge for 3-4 days.
