A Delicious Sheet Pan Meal With Sausage
A busy weeknight calls for a super easy & quick dinner and this recipe is just that! Toss a bunch of delicious, real foods on a sheet pan, place it in the oven and 25 minutes later you have a healthy meal that everyone will love. What’s the best part? Minimal cleanup!! What You Will Need
- delicata squash – the perfect little vegetable that is on the menu every fall! And no, you do NOT need to peel the skin off – it is edible and delicious!
- red onions – adds a nice mild flavor and great color to the dish.
- Italian sausages or chicken sausages – this is totally your personal preference! You could even do a spicy sausage if you want to kick it up a notch! We used Aidell’s Chicken & Apple Smoked Sausage.
- olive oil – a little is always needed for roasted veggies in the oven.
- apples – another great fall addition to the dish that gives it a touch of sweetness.
- ground cinnamon – this one is all about the fall flavor!
How To Make A Sausage Sheet Pan Dinner
Prepare the delicata squash by cutting off the ends and then cut it in half, length-wise.

Scoop the seeds out with a spoon. Cut into half moon slices. That’s it – no need to remove the skin, it is edible!

Place on a sheet pan with sausage and red onion. Drizzle all in olive oil and sprinkle with a bit of salt.

After the sausage, squash, and onion have baked for 15 minutes, add the sliced apple and cinnamon. Roast for 10 more minutes.

Enjoy immediately or divide into containers to store in the fridge as meal prep.

Storage & Meal Prep Tips
You can store any leftovers in an airtight container in the fridge for up to 4 days. This is a great option for meal prep! On Sunday you can toss all the ingredients on the sheet pan, bake it, let it cool, and then divide it up into lunch containers for the week. So simple and great to have on hand!

- What else would be good on this sheet pan dinner? You can really get creative with this one! You could easily add potatoes, sweet potatoes, change the delicate squash to a different squash, the options are endless! You might have to adjust your cooking time to account for any larger, more dense foods (like potatoes). Just make sure you cut them fairly small and you shouldn’t have a problem. - What type of sausage should I use? This is absolutely up to you! It would be great with Italian sausage – mild or spicy depending on how you like it. Or you can use a chicken sausage like we did! Pictured below is Aidell’s Chicken & Apple Smoked Sausage.

Description

Ingredients
- 1 medium delicata squash, halved and sliced (leave the skin on, it is edible)
- 1 red onion, halved & sliced
- 4 Italian sausages or chicken sausages (pre-cooked), halved
- 1–2 tablespoons extra virgin olive oil
- 1/4 teaspoon kosher salt (more, if desired)
- 1–2 apples, sliced (we used honey crisp)
- 1 teaspoon ground cinnamon
Instructions
- Prep: Preheat oven to 375 degrees F. Pierce the sausages once or twice with a fork.
- Sausage + Veggies: Place squash, sausage and onion on a large sheet pan. Drizzle with olive oil and massage to coat. Sprinkle with a 1/4 teaspoon kosher salt. Bake in preheated oven for 15 minutes, middle rack.
- Add Apples: Remove baking sheet from oven and add sliced apples. Sprinkle apples with some ground cinnamon. Continue baking for an additional 10 minutes or until sausage is fully cooked and squash is firm, but tender.
- Serve: Remove and let cool slightly. Serve immediately.

I really like the flavors in this dish! I love roasting Delicata squash. I personally like them more golden brown, so it took longer than 25 minutes to achieve that in my oven- next time I’ll try 400 degrees and possibly longer. I love a sheet pan meal and this one is great, thanks, Erin!

This was really good and so easy. We did half Adelle chicken sausage and half Italian. Also added potatoes and zucchini. Our Italian sausages weren’t precooked so next time I’ll start them with the potatoes, about 10 minutes ahead of everything else. The cinnamon apples might have been the sleep star of the dish – my kids inhaled them. 🤣 Will definitely do again.
