Simple Breakfast Yogurt Toast + Flax and Honey. Simple, beautiful and perfect for those mornings when you are running out the door!
Simple. That is what I am all about these days. Simplicity. The little things. Peacefulness.
We just got back from a short weekend at our family cabin and it was exactly what our little family needed. Yes, we still had wi-fi and most of the luxuries we have come to expect and “need,” but being surrounded by trees and sitting next to a big’ole lake just brings a certain amount of perspective. It’s like a reminder of just how small we all really are and how precious life is. Sappy…. maybe. But I don’t care. I think we could all use a little more “sappiness” in our lives. And in keeping true to my desire for simple – I am excited to share with you this Simple Breakfast Yogurt Toast (move over avocado toast… you’ve got some major competition).
I know, I know…. avocado toast is the like the Queen of all toasts, but you have got to give this one a try. So versatile, light and refreshing. As always, don’t be scared to simply use my recipe as a blueprint. Don’t have blueberries? Throw some raspberries on there. Don’t have flax? Try chia seeds. There is no yogurt toast police that checks up on you to see if you are doing it right ?
And the yogurt – of course you have free reign to choose your very favorite kind! I used coconut yogurt, but knock your socks off if you want Greek or soy or … whatever!
I love complicated recipes that take all day. There is something truly special about them. But on the flip side, a swear some of the best recipes are so ridiculously simple you almost laugh at how easy they are.
I hope you guys had an awesome weekend and got to relax as much as I did. If not, go find yourself a body of water (and maybe pour yourself some Infused Black Tea?) and just maybe take a few hours to realize how simple life actually is. Enjoy the little things and slow down just a tad. And, then make yourself some yogurt toast ❤️
If you are looking for other breakfast inspiration, I would HIGHLY suggest the Oatmeal + Superfood Breakfast Bowl!
- 1 piece of gluten-free toast
- 1/2 Tablespoon of ground flax (and or chia seeds)
- 1/4-1/2 cup of your favorite dairy-free yogurt
- 1/4 – 1/2 cup fresh blueberries
- 1 Tablespoon organic honey
- Take toast and sprinkle flax and/or chia seeds on top.
- Put yogurt on top and spread with a spoon, making a little bowl out of it.
- Add blueberries in the middle of the bowl.
- Drizzle with honey.
