Vegan Peaches and Cream Popsicles – the perfect end-of-summer treat that is delicious and good for you!

Yes, for whatever reason, I decided to follow up a Strawberries and Cream Toast recipe with a Vegan Peaches and Cream Popsicles recipe…. I don’t know why. But it doesn’t matter because you guys are going to be so distracted with how freakin amazing these popsicles are that you probably didn’t even notice … until I just said something ….
So, why vegan? Why all the vegan recipes? Are you a vegan?
I get these questions often – no, I am not vegan. My diet contains a fair amount of eggs (free-range, organic – if possible) and other responsibly farmed protein. Our family invests in high quality, organic protein whenever we can. I feel better when I eat a diet that is very plant-based, but I am very far from being vegan. The reason I gravitate towards so many vegan recipes, really stems from my allergy to dairy products. Being able to replace things I would love to eat with vegan options that are dairy-free is SO AMAZING. I love the challenge that it presents and I love how surprised I am (and my family is) when vegan desserts and other dairy-free alternatives actually taste…. good. Like, really good. Okay they taste downright amazing. I will continue to share my own odd mixture of vegan and non-vegan recipes ? because I can and that is truly the way I eat!

These popsicles though…. seriously.
You guys have to try them. We are in peak peach season right now and you need to take advantage! This recipe could not be any simpler and even your kids will love it! (mine inhaled them).
A couple tips – if you don’t have maple syrup, you could definitely get away with honey. Also, I was SO pumped to find cans of just coconut cream at our grocery store – they do exist!

Vegan Peaches and Cream Popsicles

Description
The perfect end-of-summer treat that is delicious and good for you!
Ingredients
- 1 can coconut cream
- 4 Tablespoons maple syrup
- 1/4 Teaspoon vanilla extract
- 1/2 Teaspoon cinnamon
- 1 peach, sliced
Instructions
- Combine coconut cream, maple syrup, vanilla and cinnamon in mixing bowl and, using a hand-mixer, combine thoroughly.
- Taste and add additional vanilla, cinnamon or maple syrup to taste.
- Take popsicles molds and place two (or more) slices of peach in each one.
- Pour mixture into popsicle molds, covering peaches.
- Insert popsicle sticks and place in freezer overnight.
