Your new favorite cocktail! This Blueberry Mojito recipe is perfectly sweet, easy to make and the perfect summer drink!
Ingredients

- 1 tablespoon granulated sugar
- 1 lime wedge
- 10 fresh blueberries, divided
- 3–4 mint leaves
- ice cubes
- 1oz white rum
- 1 1/2 tablespoons lime juice
- 1 1/2 tablespoon simple syrup (homemade or store-bought)
- tonic water
- garnish: mint sprigs, extra blueberries, lime wedge
Instructions
- Sugar Rim: Place granulated sugar on a small plate. Rub a lime wedge around the rim of a short glass and then press rim into the sugar to coat.
- Muddle: Place 5 blueberries and 3-4 mint leaves into the bottom of the same glass and muddle. Add ice and set aside.
- Blend: In a small food processor or blender, blend together the remaining 5 blueberries, white rum, lime juice and simple syrup. Pour over ice.
- Serve: Add a splash of tonic water and then garnish with mint leaves, fresh blueberries and a lime wedge.
Notes
- Serving: this makes 1 mojito so feel free to double/triple as needed!
