A Simple Green Bean Almondine Recipe
There is nothing we love more than a classic holiday side dish and this is exactly that! It is so simple and delicious but we have also included options for spicing it up or making the best addition possible – bacon!! Add this to your holiday meal plan and wow your guests!
What You Will Need
- fresh green beans – these can be blanched when making the dish or ahead of time to make the cooking process even quicker!
- olive oil, butter, or ghee – use the one that works best for you.
- garlic – all about the amazing flavor here!
- sliced almonds – these put the almond in almondine – so simply can’t make it without them!
- lemon juice – just a bit to help bring out the flavors.
- kosher salt & pepper – a simple seasoning needed for just about anything!
- optional: red pepper flakes or bacon – these are completely optional but are great additions, if you choose.

What Are Good Additions To Green Bean Almondine?
If you like your side dishes a little more spicy you can simply add some red pepper flakes. If you aren’t looking to spice it up we have included notes on adding bacon to this simple dish and it really does take it to the next level – give it a try!

How To Make Green Bean Almondine
Wash and trim your green beans.
Blanch the green beans in simmering water for 2-4 minutes.
Transfer green beans to an ice bath to stop the cooking process.
Drizzle some olive oil in a cast iron pan and add your garlic.
Add the almonds, green beans, lemon juice, salt, & pepper. Continue cooking for a few more minutes.

- Spice it up: feel free to add in a dash of red pepper flakes to give this a spice!
- Bacon Option: cut up about 2-3 pieces of back into chunks in the cast iron skillet before Step 2. Remove with slotted spoon and set aside. Keep 2 tablespoons of bacon grease in the pan and use that to saute the garlic. Continue following the recipe and then toss in the cooked bacon pieces in Step 7 and toss with the green beans.
- Storage: store leftovers in an airtight container in the refrigerator for up to 5 days.

Ingredients
- 1 lb fresh green beans, trimmed and blanched
- 1 tablespoon olive oil (or butter/ghee)
- 1 tablespoon garlic, minced
- 1/4 cup sliced almonds
- 1 tablespoon lemon juice
- 1–2 teaspoons kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Blanch your green beans – tutorial found here!
- Bring a large cast iron skillet to medium-high heat.
- Add olive oil (or butter); let melt and swirl to coat the pan.
- Add garlic and move around the pan until fragrant, about 30 seconds.
- Add sliced almond and saute 1-2 minutes.
- Add green beans and move around the pan, about 2-3 minutes.
- Add lemon juice and toss to coat.
- Season with kosher salt and ground black pepper. Taste and adjust seasoning or lemon juice, accordingly.
- Transfer to small platter and serve immediately.
