What You Will Need
- fajita seasoning – it is so easy to make your own fajita seasoning with spices in your cupboard or pick-up a store-bought version at the grocery store!
- bell peppers – we love adding all the color here with a red bell pepper, yellow bell pepper, orange bell pepper & green pepper.
- yellow onion – a classic ingredient when making any easy chicken fajitas.
- fresh garlic – everything is always better with some garlic in the mix.
- fresh lime juice – adding a splash of acidity really helps to amplify the best flavor!
- tomatoes – love the fresh tomatoes in this great recipe for crockpot fajitas.
- boneless skinless chicken breasts – perfect for using in the crock pot, but you can use chicken thighs. They just won’t take as long to cook.
How To Make Slow Cooker Chicken Fajitas
The first steps to making this easy recipe are to place all of the sliced peppers and onions in the slow cooker. Give it a good stir and then add the garlic, lime juice, tomatoes, and mix again.
Place the raw chicken on the fresh veggies and fajita seasoning on top of the chicken. Pro tip: use fully thawed chicken breasts. You can use frozen chicken but it will take much longer to fully cook and will result in a lot of excess liquid.
Secure the lid on top and cook on high for 2.5-3 hours or low for 4-6 hours.
Remove the cooked chicken from the crockpot with a slotted spoon, shred and return to the pot.

Ingredients
- 1 batch fajita seasoning (homemade or store-bought)
- 4 bell peppers, sliced
- 1 sweet yellow onion, sliced
- 2 tablespoons garlic, minced
- the juice of one lime
- 2–3 roma tomates, quartered
- 4 boneless, skinless chicken breasts (approx. 2 lbs)
Instructions
- Prep: mix together the homemade fajita seasoning ingredients, if using.
- Crock Pot: Add peppers, onions, tomatoes, garlic and lime juice to slow cooker. Toss to combine. Place chicken on top and sprinkle with seasoning.
- Cook: on high setting for 2.5-3 hours (or until chicken is fully cooked) or on low setting for 4-6 hours.
- Shred + Serve: Remove chicken and place on large platter or cutting board. Use two forks to shred and return meat to slow cooker. Mix to combine. Serve immediately.
