The Best Baked Oatmeal Cups
We are always looking for a grab and go breakfast for the kids (and myself) and while they are big fans of a bowl of oatmeal, we don’t always have the time to cook it in the morning. Therefore, we love having this baked oatmeal recipe on hand for easy breakfasts on those busy mornings! Packed with nutritious ingredients, like chia seeds and flax meal, and they are dairy free. Plus, so many of the basic ingredients can be adjusted to really make them according to the personal preference of your whole family!

What You Will Need
- very ripe bananas – we all have some over ripe bananas hanging out on the countertop and this is the perfect way to use them.
- creamy peanut butter – highly recommend using a natural peanut butter that is really drippy, but feel free to use almond butter too.
- unsweetened almond milk – option to swap with another dairy free milk, like cashew milk or oat milk. Regular milk would also work, if you don’t need them to be dairy-free.
- pure maple syrup – just pick-up your favorite from your local grocery store.
- unsweetened applesauce – great for adding some moisture and natural sweetness when making all your favorite baked goods.
- vanilla extract – a little bit for that added flavor.
- rolled oats – make sure they are certified gluten free oats, if you need them to be.
- kosher salt – this simple seasoning is always a must in just about every recipe card.
- ground flax meal + chia seeds – love this combination for that extra nutritional punch!
- baking powder – these help plump up the finished product.
- dairy-free chocolate chips – love using Enjoy Life’s dairy free chocolate chips, but they can easily be subbed with semi-sweet chocolate chips or mini chocolate chips.
How To Make Baked Oatmeal Cups
The first steps to making these easy baked oatmeal cups are to mix the wet ingredients together in a large mixing bowl. Then mix the dry ingredients in a separate bowl. Add the dry ingredients to the wet ingredients and give them a good stir to combine.
Substitutions
- Bananas: if using frozen bananas thaw before use in this recipe.
- Chocolate Chips: option to swap them out for fresh fruit, chopped apples, chopped walnuts, raisins, pumpkin seeds, sunflower seeds, etc.
- Oats: any variety of oats should work in this easy recipe – old-fashioned oats, steel cut oats, quick oats, etc.
Prepare your muffins tins by spraying the muffin cups with nonstick cooking spray. Now fill them to the top with the oat mixture.
Bake at 350 degrees F for about 18 minutes.
Remove the entire pan from the oven and place on a cooling rack for about 10 minutes.
Best Way To Serve Baked Oatmeal Cups
These simple baked oatmeal cups were meant to be just that, simple! Therefore, you can easily just eat them as-is for a quick breakfast or afternoon snack. If you do want to level them up a bit, try adding a dollop of peanut butter or almond butter on top or a sprinkle of ground cinnamon. If we have time, we also love to serve them with a Strawberry Banana Smoothie!
Storage & Freezer
Simply place the fully cooled oatmeal cups in an airtight container in the fridge for 5-6 days. Or place in a freezer bag and freeze for up to 3 months. Thaw overnight in the fridge.

Ingredients
Wet Ingredients:
- 2 ripe bananas, peeled
- 1/4 cup creamy peanut butter (or almond butter)
- 1/4 cup unsweetened almond milk
- 2 teaspoons pure maple syrup
- 1/3 cup unsweetened applesauce
- 1/2 teaspoon vanilla extract
Dry Ingredients
- 2 1/2 cups rolled oats
- 1/2 teaspoon kosher salt
- 1 tablespoons ground flax meal
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 cup dairy-free chocolate chips
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, add banana and mash with a fork. Add remaining Wet Ingredients and mix to combine.
- In a medium mixing bowl, combine Dry Ingredients; stir to combine.
- Pour dry ingredients into the wet ingredients and stir.
- Spray a muffin tin with your choice of nonstick spray to prevent sticking.
- Scoop approximately 3 tablespoons of the oatmeal mixture into each muffin tin (it’s okay to fill to the top, they don’t rise).
- Place in preheated oven on the middle rack and bake for 18 minutes.
- Remove and let cool at room temperature, about 10 minutes.
- Use a small spatula or butter knife to loosen outer edges before removing.
Notes
- Does it rise: these did not rise at all so you can fill your muffin tins to the top.
- Muffin Pan: option to use these silicone muffin holders, if you want!
- Let Cool: Be sure you let them cool before trying to get them out of the muffin tin!
- Storage: These don’t have any preservatives in them, so make sure you store them in an airtight container in the refrigerator for up to 5-6 days. Feel free to re-heat before serving!

These sound amazing. Was wondering if I could substitute cocoa powder instead of chocolate chips and how much do you think I should use? Obviously these would then be all chocolate but a family member is avoiding sugar altogether.
