What You Will Need
- Extra virgin olive oil – Just a bit to cook the aromatics.
- yellow onion and garlic – Both add the best warming flavors.
- pulled pork – Feel free to pick some pre-made pulled pork from the store our try out our easy slow cooker pulled pork.
- green chiles – Adds just the right amount of heat.
- kosher salt and ground black pepper – Helps all of the other ingredients shine their brightest.
- refried beans – We love these for their creaminess, heartiness, and overall flavor.
- flour tortillas – Or whatever tortilla you prefer. Just be sure to purchase taco sized tortillas as these fit the best in a casserole dish.
- enchilada sauce – Pick up some store bought sauce or try our homemade red enchilada sauce. You could also experiment with a green sauce instead.
- shredded cheese – Used inside each enchilada and on top!
- fresh cilantro, red onion, and sour cream – Just a few of the classics to add a kick of flavor.
How To Make Pork Enchiladas
Let your oven preheat to 350 degrees fahrenheit while you gather and measure the ingredients.
Pulled Pork For Enchiladas
We’ve got so many great pulled pork options to choose from! If you need a set-it-and-forget-it recipe, use our easy slow cooker pulled pork. If you’re looking for an excuse to use your smoker, try our smoked pulled pork recipe. To make the meat filling, bring a cast iron skillet to medium high heat and add the olive oil. Once it starts to shimmer add the onion and garlic and move them around the pan for a few minutes. Then add in the shredded pork and green chiles. Stir everything together and let it all warm through for 5-7 minutes.

Now it’s time to fill your tortillas! Spread about 2 tablespoons of refried beans down the center of each tortilla topped with some of the pork mixture and shredded cheese. Roll each tortilla around the filling and place it in a casserole dish that’s been sprayed with non-stick cooking oil. Complete filling and rolling all of the tortillas and place them next to each other in a prepared baking dish.

Stop here and cover the casserole dish and store it in the fridge until you’re ready to bake!

Pour the enchilada sauce evenly over the enchiladas so that the top of each enchilada is covered in sauce. Then top everything with a healthy helping of shredded cheese and move the whole pan into you preheated oven for 20-30 minutes or until the cheese is melted.

Remove the pan from the oven and let it cool for a few minutes before serving.

Ingredients
- 1 tablespoon extra virgin olive oil

- 4 cups pulled pork (cooked and shredded)
- 1 (4.5oz) can of green chiles

- 1 (15oz) can refried beans (or black beans, drained & rinsed)
- 7 taco-sized flour tortillas (may need more or less, depending on pan size)
- 15oz jar of store-bought enchilada sauce (or homemade red enchilada sauce)
- 3–4 cups shredded cheese (regular or dairy-free) (more, if you want)
- Toppings: fresh cilantro, red onion, sour cream
Instructions
- Prep: Preheat oven to 350 degrees F and spray a 9×13 baking dish with a non-stick cooking spray.
- Make Filling: Bring a large cast iron skillet to a medium-high heat and coat the bottom of the pan with the oil. Add garlic and onion, move around the pan to cook for a few minutes. Add the shredded pork and green chiles. Stir and let warm through, about 5-7 minutes.
- Fill + Roll: Take one tortilla at a time and spread about 2 tablespoons of refried beans down the middle. Add some of the pork mixture on top and a little bit of shredded cheese. Roll up the tortilla around the filling and place in the prepared pan. Continue this process with the rest of the tortillas, beans, and pork mixture, placing the filled tortillas next to each other in the pan until you have used all the ingredients and the pan is full.
- Sauce + Cheese: Pour the enchilada sauce over the top of the filled tortillas in the pan. Sprinkle the remaining cheese on top.
- Bake: Move the pan to the preheated oven to bake, uncovered, for 20-30 minutes or until cheese is melted.
- Cool & Serve: Remove from the oven and let cool for a few minutes. Serve with your favorite toppings!
