Description

Smoked Chicken Salad – a delicious smoked chicken salad recipe with grapes, cranberries, almonds and tons of flavor!


Ingredients

Scale
  • 3 cups shredded smoked chicken*
  • 1/2 cup plain greek yogurt**
  • 1/3 cup mayonnaise
  • 2 teaspoon dijon mustard
  • 2 tablespoon honey (more to taste)
  • 1/41/2 cup slivered almonds or pecan
  • 1 cup red grapes, halved
  • 1/2 cup celery, sliced (about 2 stalks)
  • 2 green onions, sliced
  • 1/4 cup red onion, diced
  • 1 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 12 teaspoon dried tarragon leaves
  • 1 teaspoon lemon juice
  • approx. 2 teaspoon grated lemon zest 

Instructions

  1. Combine ingredients in a medium-sized bowl. 
  2. Stir to combine. 
  3. Taste and add additional salt, honey, etc. as desired. 
  4. Serve on a bed of butter lettuce or on a croissant – or however you like!
